My head is noisy as hell, will have to take it to a machinist? I'm not entirely sure that I follow your reasoning but I can still answer your question I believe.
Typically the head will be hot tanked, pressure/vacuum tested for leaks, valves cut seats ground, head checked for flatness in both directions and surfaced if necessary.
The Volvo specific things that have to be done and/or watched out for are setting the valve stem height correctly so that the shims will all be in the 4.0mm area. Next to make sure that the head has not been surfaced already, then making sure that the head is warped no more than 1mm and lastly to make sure that .5mm or .020" is the maximum material removed from the surface of the head.
It is not paramount that the head be absolutely flat but what is paramount is that the head be warped no more than .5mm and that NO MORE than .5mm is shaved off in the process. A new head should measure 146.1mm tall and can be cut to a maximum of 145.6mm tall, that's .5mm max cut.
