Temperature Gauge all over the place V70-XC70 1999

Hi I have 99 V70with 169k on it I replaced the Cooling fan along with a OEM Thermastat. The cars temp was perfect at the 3'Oclock position.Today the Temp gauge would bounce all over the place from top to bottom .and The car overheated with cooling boiling out of the expansion tank with the Temp Gauge at about the 5'Oclock position. Any Suggestions. Alsoo the car failed to start after this episode. I was finally able to star it by Pumping the gas pedalAny suggestions? Thanks
