A/C freezes up? V70-XC70 1999

Car is my 1999 V70T5. Air conditioning works wonderfully for a while, then freezes up with a stale air smell. If I turn it off for a few minutes and take the heat, it thaws and I can use it for a while longer. It does this less on the highway. On our recent trip to S. Carolina in high heat and very high humidity, it felt like I was spending more effort keeping the A/C running than driving the car!

So, I know what the issue is--it's freezing up. However, not being an A/C expert, I have no idea why. What causes this issue?
