Stupid questions about changing my own fuel filter 850 1996

OK-This shouldn't be a difficult task, but I just want to make sure I know what I'm in store for and don't create a catastrophe.

I'm about to change my fuel filter. Easy enough. When I purge the pressure on the line with the valve right behind the old filter, a lot of gas comes spraying out. Seems reasonable, but how much will be coming out? Should I hold it until none comes out, and just let it go everywhere? Will it eventually stop(besides when the tank is empty)? How much should I expect to empty? Won't this create air in the line when I start the car after changing the filter?

Dumb question #5: When I remove the hoses from the old filter, am I going to have gas pouring out everywhere or is there a valve in the hose to prevent this? I know some will come out of the old filter, and I have a cap to put over one end(that's all the new one came with) or can/should I clamp them off? That seems like a bad idea. I really don't want to pull them off and have 15 gallons of gas pouring out into my face/garage.
