Dash and Gear Selector Lights V70-XC70 2000

Do you mean the switches in the bank on both sides of the steering wheel? Those switches pull straight out. Find one that is not surrounded by wood and use a very small screwdriver to begin to draw it out. Then grab with your fingers and pull.
On the left side, pull off a blank and then push the switch out from behind. This is very useful when doing the headlight switch, which does not like being pryed out.

The shift selector light is around $10-11 at the dealer. It is the same bulb that is used for the ashtray! The console needs to be lifted to gain access to the shifter bulb.
