Temperature Gauge all over the place V70-XC70 1999

The ECT, engine coolant temperature sensor, is directly below the thermostat. When you pulled off the thermostat housing, coolant may have run over and in the electrical plug to the ECT. Coolant will conduct electricity. Unplug the ECT and clean it with electric cleaner, both the male and female connectors. Clean off any other antifreeze with soapy water.
If the ECT sensor is not reading engine temps correctly, the engine fan will not come on and you will overheat the engine. A bad ECT reading will also make the engine difficult to start.

I hope you replaced the thermostat with a Volvo one, the generic thermostats might be a few dollars cheaper but fail sooner and may fail in the closed state which will also cook your engine.
