Engine temp at highway speeds now drops! V70-XC70 1998

Ever since new, my 98V70T5Ms (42k) engine temp gauge once warmed up and horizontal has never moved no matter what I do or where I go. This past weekend on a trip to NYC, I noticed for the first time that when I get up to highway speeds and stay there, it drops a lot (45degrees down?). Is this normal? Or is my thermostat stuck open and the engine is getting to much cooling? Just curious since it's never moved before.
