I think this is how it goes:

Intake air temp sensor this is integrated into your MAF. I believe your car is using this sensor right now.

Outside air temp (wrt the engine) this tells the car what the temp is outside, usually where the car gets the number on your instrument cluster (under your drivers side headlight, i think).

Ambient/Outisde (wrt climate control) this is in the passenger compartment that tells the climate control what temp the incoming air is.

I believe the need for all three is that the air into the MAF could have warm air from the exhaust side intake, and this can throw off how much air is coming into the engine. The Ambient temp sensor tells the climate sensor how much the air will need to be chilled/heated when it comes in. This temp can be screwed with from engine heat. And the outside air temp is there to let the car know the temp, both for the passengers noting and I'm pretty sure the car makes modifications with regards to shifting (so the tranny heats up) due to this. The MAF temp might not be as accurate (due to it taking in 'hot' side air when the cars cold).
