AC on all the time? Another question... S70 1998

I still can't seem to wrap my brain around the idea of having the AC on *all* the time as the owner's manual recommends. I can understand as far as defrosting and the AC's evaparator acting as a dehumidifier in the winter (Car Talk covered this in fact just recently, too). But what about when the temp is in the 40 to 60 degree range and I don't want the heat or the AC on? What then?
