My guess is that one of your tubo hoses is loose or split. Once you start to get on the throttle and build boost it will leak air (probably quite a lot..) and it will stumble/stall as it goes super-rich.

The shop may have had the intercooler out as well and forgotten to tighten up the hose clamps and a hose has blown off or it's leaking air.
