How do you 'approach' top speed. 850

Not that I plan to do this (I just don't have enough track experience);
but, when doing a top speed run I assume you don't just floor it
til you max out. I recall reading a magazine article where the
press was doing top speed runs in some car and the drive-along
pro made them slowly ease up to the top speed. I thought that
odd; but if you think about it, it makes sense and seems prudent.
