30K service by the book 850 1999

Being that I see you're already getting everyones opinions on what they think should be done at 30K, I'll mention that Volvo has the list in your owners manual and that's what a dealer would typically follow as Volvo made handy print out sheets that all Volvos dealers have and most should be using these days.
If you follow the OEM recommendations, chances are good that your car will last a long time. The only thing they don't list but should is flushing ATF on occasion and if it were my car, I'd flush it every 30K miles or so too.
By changing brake fluid, they mean flushing the system, not just sucking out the resevior.
Coolant does not need to be changed unless the system is being serviced for some other reason, like a leaking hose or radiator. The reason is that the coolant is never in contact with anything but aluminum thus doesn't fail like it does in other types of engines. Most with the "white engines" (all aluminum) never change coolant and don't have problems with it either.
