waxing vs polishing

I recently bought a 1995 850 sedan. Previous two vehicles I owned were so old and ugly that I never worried about waxing or polishing them - heck, I never even washed them. But, my new used car is in beautiful shape and I want to keep it that way. The manual says to polish the car and then to wax it. What's the difference? I assume they don't mean polish with a sander or wax with a candle ;).

What recommendations to you guys, in the real world, have? How often should I do each? I'm sure more frequently in winter is appropriate, since I live in Quebec with REAL winters and salt on the roads.
