How can I tell if it's the evaporator or just needs a charge? 850 1997

It's not reasonable behavior, but unfortunately it's typical for the 850. The first suggested course of action is to recharge the system with dye and see what happens. It may run OK for months or more. If so, you have a slow leak that may be manageable with occasional recharges, and this is an easy DIY project. The more complete solution is to replace the evaporator ($$$). And sometimes, that has to be redone!
