Wheel Size and Offset S70

I'm trying to find out if I can put 205/55x16 on 16x7 rims with a 20mm offset. I wanę to have more of a "dish" look than the usual fwd look. My car is an 2000 S70 SE with the stock suspension. Has anybody tried a similar setup?
