Intermittent low coolant light S70 1998

I've noticed recently that the low coolant light is going on briefly then off after about a half hour or more of highway driving.

The coolant is just at the min level when the engine is cold. What level should it be at? Also, the owner's manual says to only use Volvo genuine coolant. I will need to order some and have it shipped if that's the case - the dealer is a half hour away. Does anyone know if it is safe to add an ethylene-glycol based antifreeze to the original coolant to top it off? I can't seem to find any information on what type the original coolant is.
