Coolant Temp Sensor 850 1993

What function does the coolant temp sensor serve? I think it might be the reason why my 850 starts rough every morning up in Maine. So far I've replaced the spark plugs, fuel pump, fuel relay, fuel filter, ingition coil, distributor cap and rotor. I was going to replace my spark plug wires but they are in good shape. A volvo indy suggested the coolant temp sensor. Is that a difficult replacement job?
