Cooling System Question S70

So I am planning on replacing the thermostat because the engine is slow to heat up - at least the gauge says so.

After a moderately lengthy drive, with the gauge staying below the 50% mark... the fan stays running after the car is turned off.

I believe I have a thermostat problem. Engine is slow to heat up and interior heater air blows mild.

But if the engine doesn't get up to temp, why is that fan ever kicking on and why does it stay on after? I'm assuming that the temp switch for the fan is getting the "oooh it's too hot in here" signal and keeping the fan on...

Any ideas?
