Low Coolant Question

This morning when I was leaving for work, I noticed that my low coolant light was on. The car has never ran hot, I checked for any water where it wasn't supposed to be, checked for any coolant reservoir leaks. I topped up with 50/50 mixture and went on my way. The coolant was low but not out. My question is: Do the S70's occaisionally just evaporate the coolant? I have not noticed any coolant in my driveway or in the parking lot at work? Nothing has changed in my fuel economy, performance, etc. I am at a loss and want to avoid the dealer at all costs.
