Maybe I'm not understanding something but two things above don't read right to me. For one, battery cables never just "burn out", a battery terminal end can corrode but that's about it.

12.1V is LESS than a normal, good battery's voltage w/o any load so if that's a reading with a running engine, your alternator's not putting out proper current. It needs to be 13.5 to 14 V while running with any kind of load but one needs to check the alternators max amperage output under load to be certain. A device called a Vat-40 (or newer) does that and any shop should have that testing device.
