Climate control and Defrost mode and mist smell 850 1995

When I have my ECC in Defrost mode the car seems to be fluctuating in RPM a lot more nowadays and seems like evap is kicking on and off a lot more..is this normal. I was wondering if I need to charge the AC in the winter to keep the freon toped off..I thought that AC kicks in Defrost mode on ECC.. is that true
Also wanted to know if car uses more gas if I have the heat on and am running in defrost mode..
I am also getting a lot more misty smell in the defrost mode and i never got that much smell during the summer days.
is this a sign of something going bad..
