2003 VS.2004 S80

The new car is probably the better buy. But it's my experience that these engines give the S80 two different personalities. The 2.5 Turbo is a great engine, lively and eager. But I have an affinity for in-line sixes-- they're so smooth. $25K for 21,000 seems like too much, so I'd go for the leftover '04. See if you can get the dealer to throw in--or heavily discount--the extended warranty.
