There is a temp sensor at the compressor, if it gets too hot the compressor shuts off. Try it some time in your driveway: with the engine hot and the AC no longer working, spray hose water through the passenger side of the condenser/radiator and I bet the AC clutch will engage.

The engine fan MUST turn on when the AC is on. If not, check your fan relay.
