How do i know if my evaporator is busted? 850 1997 GLT LP TURBO

My AC works fine, but the climate control never seems to be on the money, i.e. cold instead of hot and vise versa. If I abstain from using my AC, will the evaporator last longer? All this talk is making me scared to use it!!!
