On one of my older cars, the clutch interlock was a simple button switch that is operated by the movement of the pedal, like the door light switch pins. So either unplugging it or snipping the right wire would do it. One point of caution, this same switch may also be connected to the cruise control to cut the gas when the clutch is engaged. To be carefull with those wire cutters.
