Sounds like the idle speed controller is getting bad info or is messed up or you've got vacuum leaks. Check all the vacuum hoses and elbows. See if you can pull any codes. Clean the MAF sensor and temp bulb. Check out the FPR but one would think that it would give you grief all of the time.
