What is correct way to re-charge air conditioning?

The kit I purchased incldues a pressure gauge which gives a range as to where it should be when the compressor is on. I added a little freon, then checked it with the gauge and found it to be within the acceptable range. I guess if it was low I would add more. Not sure what I would have done if it was too high. That was two years ago and it still works fine. Having said that, the correct way would be to evacuate the system and recharge it with the proper weight with dye added.
