Why do you want to replace all those parts instead of just the parts that NEED replacing? Usually, pads alone are all that's required unless you have other problems, like warped rotors, rotors worn under specs (happens usually after 2 pads sets, like about 70K miles), siezed or sticking caliper?......a problem, not routinely. If all you need is new pads, why spend extra time and money unnecesarily?
The emergency brake shoes don't wear as they only hold the car when you're not moving so unless the car was driven with the e-brake on for a long time (not likely) or the shoes fell off (material does fall off the metal backing in very old, high mileage cars, like 200s/700s), there's simply no good reason to replace those parts.
As for the brake hoses, although I've read where some say it'll give you a better pedal, it might not be worth the bother. Those OEM hoses typically outlast the car.
