There have been several threads about this over the years, the consensus is that it just isn't worth the cost and effort, and you'd be better off selling the AT car and buying an MT car.
The 240s are easy enough (diabolical laugh!) to transplant, but that wasn't your question. Even for a 240 you would be best having a complete donor car since there are a number of parts, including the pedal cluster, interior parts, and clutch hydraulics that you'll need.
I think it was Chrysler that tried to save a few bucks by not drilling the crankshafts of AT cars for a clutch pilot bearing! However, they do offer an external pilot bearing kit to allow former AT motors to be transplanted to MT cars! So far as I know, the crankshaft is the same in the AT and MT Volvo 850s. Still, a lot is different, including the car's main ECU.
Alternative "B" to the Volvo rebuild and a full day of a Volvo tech's labor is to find a lower-mileage AT from a wreck and a cheaper indy Volvo shop.
