AC too cold 850 1997

I live in South Florida, and you never hear about the car's AC being too cold. Mine is...in fact what happens is that the evaporator even freezes up (feel underneath on the drivers side and there is moisture turned to frost). It freezes up so bad that(I assume)the air is blocked and stops coming out of the vents and all I hear is a loud air noise down by the passenger side where the blower is. Once I turn off the compessor,(the condensate starts to run out on the ground outside.....thaws out), the air starts to circulate and blow out of the vents again. I noticed that the compressor never turns off (cycle off) unless I switch it off. Any ideas?...I think that there must be a temperature sensor that has gone bad and does not turn off the compressor when it is cool enough inside...make sense? And where is this sensor...more than one...and how would I test it to make sure it is malfunctioning?.....Thanks in advance!
