My 96 850 GLE (auto, 143K) also consumes about 1QT every 2500 kms. My mechanic said it's normal. I also find that it consumes less oil if I drive it more gently. I change oil every 5000 kms, so it's not a problem.

Here's a link to an article about special engine oils. I've seen them on sale at Canadian Tire, but haven't tried them because it's cheaper to keep a few bottles of regular oil in the trunk.
