My first thought is low fuel pressure even though (and maybe because of ) the pump replacement. The fact that it runs better when you pinch off the return line (raising fuel pressure) tends to support this theory.
I've seen posts saying that improper pump replacement can result in low fuel pressure. I think it has to do with the spring-loaded mechanism pushing down and disconnecting the pump outlet from the feed-out pipe, or something like that.
Luckily I didn't have that problem when I replaced my pump (pre-emptively) about 3 months ago—although it was a PITA job. In fact the car now takes a local hill in OD that used to require a kick-down to 3rd.
