Coolant Loss - where did it go? 200 1988

You didn't overheat the engine. If there is no coolant in the oil (chocolate milkshake appearance) headgasket would NOT be suspect.

You may have a slow leak at the waterpump through the shaft seal. Check the pump for wobble (belts loosened). If yes, then replace soon before it seizes, engine overheats, head warps, $etc.$

If the system isn't maintaining pressure, due to leak or loose pressure cap, fluid will boil off (mysteriously disappear). Just keep some spare antifreeze (even preferably distilled water) in the car.
