Congrats on the swap!
The KD is a good choice - lots of fuel for power with them. I sell them for a bit less, but $25.00 each is fine.
Stacks sound great, but unless they are a proven design they just look good. You can take out the spacers if you want.
Stick with the ATF in the dampers.
Wipe the springs with WD-40 on a rag, and maybe oil them a bit. If they are intact and the coils evenly spaced, don't worry about them.
Many of the HIF6 twins just used one choke connection like the Strombergs - you'll know quick enough, so try it. One will probably be enough to start it easily, it just won't idle smoothly during warm-up.
