High idle and white smoke after engine swap 700 1990

I have two questions. The rest of this is backstory and questions I expect will be asked.

Howdy guys. I finished my engine swap a couple days ago, and needed to swap an oil tube that feeds the turbo today. I did, and I installed the following new parts:
Rear Main Seal, Intake gasket, Exhaust gaskets, spark plugs, Crank position sensor, distributor o-rings, thermostat, and oil.

I started it up two nights ago (when I found out the oil tube wasn't compatible) and lost 2.5 quarts of oil. The car ran maybe 2 minutes, not long enough to get warm.

Today, I started it up after all that, and I have a high idle, and after 3-5 minutes of running, I have white smoke out the tailpipe. It doesn't smell like antifreeze, but I'm not sure what it does smell like. Looks like a car's exhaust when it's pretty cold out. It's 53 out and the car hasn't yet fully warmed up.

I put wd-40 and about a teaspoon of synthetic oil into the combustion cylinders, and cranked it over by hand several times to lubricate the engine, as it hadn't been started in some time.
It's guaranteed to be good for 3 months/10K miles, all the exhaust ports and spark plugs looked equally dirty. Everything looked normal. When cranking by hand, there were no dead spots, and no cylinders that cranked over more easily than others.

I ran the LH2.4 self-tests, and it clicked everything it was supposed to (except the RSR?) in order. I pulled the IAC plug and the idle started surging. checked the codes and had the normal 2-2-3 and cleared the code. No other engine codes.

The new intake and exhaust gaskets are both Felpro. The exhaust are paper on both sides, and I made sure to install them in the correct orientation. The intake gasket is a soft, dark grey material, which I expected to squish lots more than it did. I'm not sure I put the correct side out, if there is a correct side to go in or out. I sprayed carb/choke cleaner on the injector o-rings and the top of the manifold, and didn't notice a significant change in the idle.

The cooling system seems to be behaving normally. Pressure builds slowly and steadily in the top hose, and it does not become overly hard like it did with the engine with a bad Head gasket.

The oil I used was originally 4 quarts of Castrol Tection Diesel 15-40 Plus 1 quart o'reilly (formerly kragen) synthetic. I lost 2.5 quarts of that, then put in 2 quarts of cheap 10w-30, which is labeled energy conserving, but not synthetic and a half-quart of valvoline all-fleet 15-40.
Why all the oils? Because I was being cheap and plan to change the oil after about 1000 miles, then stick with the Castrol Tection 15-40. I did realize that this engine might not be as worn as the last engine, and so I bought the two quarts of 10-30.

I'd really like to know the cause of the high idle and the white smoke. The car was driven about 1500 miles on its bad head gasket, since I planned on (and did) replacing the complete engine.

Run the engine for a couple of hours and post back. It sounds like you just have some residual oil in the chambers which can take quite a while to burn off. I would wait to worry about the idle until that time as well.

I think I was being a bit paranoid too. I think it's just running and producing water vapor. I took a white sheet of paper and put it behind the exhaust and it was just clear water. There's a slight rich smell, or maybe it's a bit sweet, but it seems to be just water vapor.

I also just realized the gas is very old and needs to be burned off and replaced too.
