What is the part called with the studs that mount to the drum and wheel?
That is called a hub, but on your Volvo the hub and drum are pressed together which is not the norm. On most rear wheel drive cars and light trucks without independent rear suspension, the studs are pressed into the flange on the end of the axle shaft and the drum slides off after de-adjusting the brakes.
The part where the castle nut mounts on to with the key- is that the spindle?
No, that is a rear axle shaft. Your spindles are part of the the front steering and suspension.
It sounds like you need an axle, drum locating key, axle nut, axle bearing and bearing race and possibly a brake drum. You might be able to reuse your axle bearing and race, but unless you changed it recently, I suggest a new 1.
I also suggest replacing the axle seal since you are in the "neighborhood" and don't forget to get the proper sized cotter pin.And new grade 8 backing plates nuts and bolts aren't a bad idea either.
