Check the wire cables that attach to the linkage near the throttle body to make sure they are not out of place. The wire cables are the gas pedal linkage and the cruise control linkage.

Also since it has not happened again, is it possible the floor mat was out of place and pushed accidentally by your foot. Also look around the gas pedal and make sure the panel beside it is not loose or anything else near it that might be loose.
