If you had to drain the cooling system (i.e., if you replaced radiator, heater hoses, water pump, thermostat, etc.) it is entirely possible that there is air trapped in the system.
Here's how "to burp" the car, to purge trapped air. Find a hill (angled driveway will do, or put the car up on ramps, if you're in flat terrain).
Let the engine run until the temp gauge needle is in the middle. Set the heater control for "Max Heat".
Put the car nose up and let it run for 5 minutes. Then, put it nose down, and let it run for 5 minutes. You should see major air bubbles in the coolant overflow tank.
Top up with coolant/water (50/50) and you should be fine. This should not have to be done again.
If, on the other hand, you did a headgasket, and there are major bubbles in the coolant, this suggests that the headgasket is leaking. Expect to find oil in the coolant and vice versa.
I'm betting you didn't do a headgasket job, so above suggestions might be useful.
