Does the Computer need time to learn changes? 700 1987

I have been having issues with my 87 745T. It was running really weird with a slight surge, lack of power and poor gas mileage. Well I solved the worse problem through the FAQ section by replacing the knock sensor. Still had the other problem and my tech suggested the problem sounded like a bad coolant sensor. Well I had already put a new one in last year. I found that when I played with the sensor plug the car ran well for a few hours then reverted back to being a pain. My indy tech fixed the plug and the car runs much better and the gas mileage has returned to normal. But there is still this weird occasional surge like the engine is still hunting for the right settings. I had to make a run about 30 miles on the interstate this morning. Well it was doing the hunting thing most of the way up to my destination. On the way back the car ran as well as it has ever run.
So my question is, since the coolant sensor was sending screwed up info to the computer for a while. Does the computer need time to relearn the correct information?
