How should a head gasket be replaced..what can I expect from my mechanic

Can you give me any things to make sure he does and time alotted and cost? Did anyone ever hear of putting inspection machine on muffler exhaust to tell if antifreeze fumes are giving clues that head gasket is blown?? thanks, Lynn
