Temp. Spec. for Thermostat? 200 1981

What is the correct temperature specification for a thermostat for a B23E? Local parts store shows 180 degrees.

Reason I ask is, the engine is not reaching a "normal" temp reading based on earlier performance - the weather's been a bit cold, highs in the 30's Farenheit, but I've noticed that she seems to be running a bit cooler than normal. Is this a symptom that one would replace the thermostat for anyway?
