SU intake manifolds 120-130 1965

I'll be droping a B20B in my 121 soon. The engine is currently being rebuilt & i am wonderoing which intake manifold I should use. I remember this was already disscussed on the board but could't find the thread. So now I have two manifolds I could use: either anearly aluminum one or the late cast iron wich built-in throttle plates. which one will provide the best performance?

By the way, what is the purpose of these manifold -mounted throttle plates???
