Thermostat Rating. 700 1990

I have a 1990 740 Turbo that overheated because of faulty thermostat. What rating should I get on a new one. I am hearing different opinions on 195 degree 191, and 180 degrees. The temp outside is about 100 degrees and if I change the thermo in the winter back to 195 degree is it ok to run the 180 degree in teh summer.
