Replacing sensors below intake manifold. 200 1981

1981 242 Non-turbo: While I have the intake manifold off I'm figuring on replacing the coolant temp sensor, engine temp sensor and thermo time switch. They total $60 at Grotons, but I figure it's probably a wise investement. Do these three screw in dry or should something be put on the threads before installing them? Also, what about the second thing that is mounted below number 2 intake port? I've been told not to bother replacing this. Actually, sometimes I wonder if I should replace any of them.
