Carb intake man. on E head 1800

More questions.
I am shipping an E head to a shop for refurbishing. I want to use the SU intake manifold on it, after blocking off the outer side of the injector ports. My questions are thus; First, what is an efficient and safe way in which to plug the injector port INSIDE the intake runner? I assume that that hole, if left unfilled, would create a bit of unwanted turbulence.
Secondly, if I want to create a smooth flow from intake man to head, how do I go about it? The manifold has a split collar for each runner that fits between the head and manifold. It would seem to prevent matching the head to the manifold. The diameter of the intake port on the ehad is substantially larger than that of the manifold. What is the standard practice in this case? Can I do without the collar, and simply match head to manifold?
Of couse, I may be missing something here; it could be that I will get better flow having a slightly larger head port than the intake manifold. Thoughts? Is this design to prevent 'bounce'? or is it simply an artifact of using carbs on a head designed for injection?
