Mustang GT wheels 1800

After a lot of searching on the net I finally figured out that the previous owner put on 68/69 Ford Mustang GT wheels.

They are 14"x6" in size and have 205 75R tires on them. I'm inclined to think that this is too much tire for this car. I'm new to Volvos and used to driving my Triumphs that weigh hundreds of pound less and have rack and pinion steering with about the same horsepower. Maybe I haven't got used to the car yet, but it feels like I'm driving a truck. Any recomendations on tires that would be a better size. Would I be better off find a set of stock wheels?
