manual overdrive questions, and a question about hesitation 120-130 1968

Hi all...

I am about to become the proud owner of a 2-door 1968 122S that will be eventually replacing my previous '67 project car (not enough time or money, unfortunately, to continue that project). The '68 is completely restored inside and out, so now I can at least enjoy learning all about it from maintaining it. :)

Regarding overdrive: This car has a 4 speed manual transmission with overdrive. I've read about the overdrive addon in the archives, but perhaps I haven't read enough. My only experience with overdrive is in automatics, so forgive my ignorance on the subject as it applies to manual trannies. The turn signal switch serves as the toggle switch so you can turn it off and on as you wish. So the questions I have are:

1. Should I leave it turned on and/or when should I turn it off?
2. Are there any times when it should not be engaged, like while shifting between gears or something like that?

Regarding hesitation: It seems when hit the accellerator too quickly, the car sounds like it's going to die. I let off of the accellerator and it recovers, and in order to accellerate I have to gradually apply gas. It sounds like it may be getting too much gas and nearly flooding out when I press the gas too quickly. Might it be in need of carburetor adjustment or could it be something to do with the fuel pump? The fuel pump is the original mechanical type, and the carburetion was converted from dual to a to a single carburetor setup. To give a little background that may be useful... the car was restored by a fellow Volvo fanatic. The chap that I am purchasing the car isn't really a car man and less-than-willingly inherited it from said Volvo enthusiast. Unfortunately, he can provide me with little information on what was modified on the car. Also, the car did sit for at least couple months before I came along. The last time the car was on an outting, it was on a 4 hour trip in October of last year and the owner reports having had no problems on the trip except for a mis-hap with the ignition key (another story that some may already be familiar with in their own personal experience).
