Timing my B21, Head reassembly, and heater hose issues. 200

Hello all! Well it's time to finally put my '79 GT's engine back together after a long delay of beautiful summer days. With piston #1 at top dead center, the harmonic balancer/crank pulley or whatever it is mark corresponding with the 0 on the timing cover, the distributor pointing at the cyl # 1 spark plug wire (keyed dist. cap) and the cam gear's notch matching the one on the valve cover, it should be in perfect timing, right?

The head is re-machined and ready to go on. I bought 2 new heater hoses from FCP groton. They came with "O" rings for each end and also these funky things that look like little rubber doughnuts. What are these for? I didn't see anything like that in the old heater hoses. And since those hoses are a real PITA to install with the head on...I guess it's pretty important to know.

I took pretty much everything off the engine, like the fuel distributor, wiring harness and alternator and other things. I cleaned my dirty dirty engine bay, but now I'm wondering If I can install the harness after I bolt down everything or if there's an order to this (should have remembered! oh well) Thanks!
