1989 740 Stalled Uphill WHY?

The 7xx and most likely the 9xx cars have a 3/8" flexable "hose" that runs from the fuel pickup to the pump. It is short, maybe 1.5"long or so, but very thin. Over time it can deteriorate and crack. When you go uphill, fuel settles to the rear of the tank and under normal circumstances this would never be a problem but the hose is exposed. If it is torn, the in-tan pump will not be able to pickup fuel, it will suck air instead and you will lose fuel pressure very soon afterward.
