Ever make your own wiring harness? 200

So uh, I know this sounds stupid, but has anyone ever made their own wiring harness? This is not my idea, but my friend, who is an unemployed college student. He's got a 1981 244 DL (B21F). I have replaced several harnesses, but I have never made my own. We are going to just replace all the old wires with new ones and use the original connectors and then wrap it in new heat-resistant tubing.

Has anyone done this? Any tips/ideas?

We're probably going to start tomorrow... :|
